As for Rem / Beatrice, I personally like Beatrice, but I don't really like Rem personally. I think her insecurity makes her a big turn-off to me, and her guilt too. I don't mind her though, nor do I dislike her. Beatrice is a cool character, with an interesting personality, which is why I like her too. I think Beatrice is just a stereotypical tsundere loli, but with added strength and an interesting appeal due to her appearance.
Rem actually has a valid reason to feel that way though. As for Pack, wait until you see his true form, he becomes much more manly. He'll probably get a deeper voice for that form
